The Ellis family have always been into cattle and love their beef. Having grown up around cattle, the family was aware of the commercial realities of beef farming in Australia and its impact on the health of the animal and the flavour of the meat. For this reason the Ellises decided to start farming Speckle Park beef, the natural tenderness of the breed means that the animals can be aged for longer in grass fed conditions and produce an intensely flavourful and tender cut of meat. Having full control of the process means that we strive to produce the tastiest, best beef in town, why? Because we eat it too.
