‘The Prospect’ 2005 vintage is a blend of 75% Cabernet Sauvignon, 25% Merlot. The fruit comes from a mixture of areas, both cool and warm climate including Macedon Ranges, Strathbogie Ranges, North East Victoria and others. The fermentation, pressing, oak maturation and blending are all aimed at elegance, balance and distinctive character. The style is elegant, with a complex nose and palate, and a firm dry finish. The Merlot contributes softness, middle palate richness and earthy, gamy and leathery characters on the nose and palate while the Cabernet exhibits fresh berry fruit and minty varietal characters on the nose, and provides an excellent dry finish on the palate. This wine is best enjoyed with food, particularly richer, full-flavoured dishes where the wine’s structure complements the food beautifully. Medium term cellaring will be repaid, but the wine is most enjoyable now, whilst still relatively young.
