Macedon LD is our deluxe, no expense spared, top of the range sparkling wine. Hanging Rock winemaker John Ellis discusses the evolution of Macedon LD, "We had noted Bollinger’s achievements with their ‘RD’ product and our early experience with ‘Macedon’ led us to believe that we could match them in the style of sparkling we love best. James Halliday reviewing the LD Cuvée VI clearly agrees with us."
The price is simply a reflection of the amount of time, effort and care that goes into making a wine like this. The wine has spent ten years on yeast lees, building an incredible depth of complexity and richness.
Our first LD release, Macedon LD Cuvée VI was Australia's Equal Top Ranked Sparkling - 96 points in James Halliday's 2007 Wine Companion (equal Top with our Macedon Cuvée XI - 96 points).
James Halliday writes about the 2005 Macedon Ranges Wine Show of which he was Chairman of judges - "If you use the most common climatic measurement for vinyards, heat degree days, Macedon is the coolest Australian mainland region (without taking into account the windchill factor.)Chardonnay, Pinot Noir and Pinot Meunier grown in conditions such as these are obviously tailor-made for sparkling wine base and the wines age with extreme grace . . . .".$115 a bottle for a current release Australian sparkling wine might seem implausible, if not outrageous. But if you want to find out just how close the wine in question comes to the style of Bollinger, the price takes on a different make-up. The LD Hanging Rock Cuvée Six (96 points) spent almost nine years on lees before disgorging in September this year. Its excellent fine mousse attests to its very long lees contact, as does its immaculate balance, despite its low dosage of only 2g per litre of sugar.
The complex bready/biscuity characters of the palate are reminiscent of Bollinger, and very good acidity stretches out the long, lingering finish.
