The cool region of Macedon is about one hour north-west of Melbourne. Home to come of Australia's top producers of pinot noir and chardonnay and the geolgraphical feature of the Hanging Rock, made famous by Peter Weir's film. The Hanging Rock winery was planted by John and Ann Ellis in 1983 at their Jim Jim property. They expansded into nearby Heathcote in 1992, planting Shiraz. Thier dedication to making exceptional wines has resulted in the Macedon Brut continually being held up as one of Australia's best sparkling wines. Not content with wine, they've just launched their range of Hanging Rock beef.

Made in the same method as Champagne. Lovely light cherry colour with busy bubbles in the glass. Creamy strawberry and a spritz of yeasty soda bread. Soft cherry danish richness with ruby grapefruit. Sharp acid cutting through complex layers of red fruit and lingering rosewater.
