The Hanging Rock Winery sources fruit from all over Victoria. We source grapes from regions that best suit certain varieties. For example, due to the warm days and cold nights that they receive in Bendigo, Cabernet grows very well there. The cold nights help develop great tannin structure, just the way we like our Cabs.
2018 produced excellent fruit quality. A lifted bouquet of cassis and aniseed precedes a palate of sweet winter fruits, blood plums and blackberries. The palate is long and fleshed out. Good acid structure and chalky tannins complete this delicious package.
Cellaring: Short to medium-term cellaring.
Food Matching: This wine is best enjoyed with red and game meats such as light lamb dishes or cold beef salad and is ideal for immediate drinking.

I like this. A straight-shooter. Regional postcode written clearly on an envelope of dried sage, bouquet garni, cassis and black olive, coating the stamp of finely wrought tannins. This is a moreish cabernet Avuncular in a way that is highly attractive. Lots of flavour, savouriness and appeal.
