Back in the late 70's our founder, John Ellis, was the winemaker at a winery in Echuca called Tisdal's. The owner was quite the visionary and couldn't understand why no one in the country was growing Merlot or making a Cabernet Merlot, a major component of the world's most famous wine blend, the Bordeaux blend.
John has always understood that Cabernet and Merlot work hand in hand. Cabernet is naturally very bold and tannic but lacks mid palate weight and structure. Merlot is the opposite, it's generally smoother and lighter but has a great mid palate, the two varieties are made for each other.
This new look ROCK range showcases the beautiful scenery we have here at the Hanging Rock Winery. Each wine represents beauty in each of the seasons. The ROCK Cabernet Merlot stands for winter, a time to cozy up, unwind and relax. This image depicts the winery itself and some of the surrounding landscape.
ROCK Cabernet Merlot is smooth, medium-bodied, yet full flavoured wine.
It has soft spicy aromas on the nose, and the palate offers fleshy, ripe cherry/plum flavours with just a hint of sweet spice. The finish is soft, smooth and medium dry.
A lightly oaked, 'drink now' style, ROCK Cabernet Merlot is made to be enjoyed right from the moment it is bottled.
Food Matching: It goes well with barbecued and char-grilled meats, pasta dishes and many Asian foods.
