In 1983, we planted the first vines in our 'Jim Jim' vineyard, situated at 650m above sea level. Our aim was to make a great Australian sparkling wine. We planted Chardonnay and Pinot Noir and trellised the vines in the traditional sparkling wine method.
As per our other 'Macedon' sparkling wines, Macedon Rose is made using a non vintage blend of base wines, made from pinot noir and chardonnay from our own vineyard, dating back to 1987. The base wine spends an average of 4 years on yeast lees in barrel before being tiraged bottled. Each one of our 'Macedon' sparkling wines starts from this base.
Our 'Macedon' Rose is aged on-lees in the bottle for a minimum of 12 months. A couple of drops of Pinot Noir are added to the wine at dosage to give the wine its salmon colour.
'Macedon' Rose is salmon pink, delicate in flavour, dry finishing and an ideal aperitif.
