Sparkling Shiraz is a purely Australian invention. Unlike other sparkling wines, which are made to embody elegance and finesse, sparkling shiraz is all about rich, opulent flavours.
We only make sparkling shiraz in the perfect years for a couple of reasons. Making sparkling shiraz and getting it right is tricky. It's hard to balance a wine that has lots of tannins, acid and carbon dioxide, it's easy to make it too hard and astringent. On the other hand, if there isn't enough acid and too much sugar it can easily be too flabby and cloying. For this reason, we only make this wine in cooler years, when the grapes are naturally lighter and more acidic, which usually happens only 2-3 times in a decade.
Sparkling shiraz is the most labour-intensive product we make. In order to do it well we have to do all the things to make a great shiraz; fermentation on skins for colour, flavour and tannins, time in oak, etc. Then you have to do all the things to make a traditional method sparkling wine; fermentation in bottle and disgorging. All of this means the winemakers take a lot of time and effort making sure the end result is worth all the time and effort.
This wine has sent 12 months in used french oak barrels and 5 years on yeast less in bottle.
The flavour profile is one of richness and opulence, but with the traditional Heathcote balance. A lot of the flavour profile conjures up images of Christmas pudding. There's plenty of dried fruit character with some spice and depth of flavour. There is a bit of residual sugar there to offset the wines natural tannins and acid but it blends well with the other flavours.
Sparkling shiraz has become a traditional Christmas drink but is also perfect for cold winter days with rich, hearty food or cheese.
