Halliday - Top Cellaring Selections June/July 2016. 2013 Jim Jim Chardonnay
2013 Hanging Rock Jim Jim Macedon Ranges Chardonnay
RRP $40/ cellar until 2030. 5 Stars
Hand-picked, whole bunch-pressed, wild-fermented in French oak (30% new). Exceptional pale straw-green; the very cool site and low yeilds result in intensity built into every facet of its flavour and texture. The wine will outlive all but a handful of '13 Australian chardonnays. It seems niggardly to judge it today, not in 5,10 or 20 years time, but thats the rule 13% alc.,

- What can we expect from this wine with age?
The Macedon Ranges is arguably Australia’s coolest wine growing region and our site is one of the coolest in the region. The result is fantastic structure, balance and intensity in this wine. All of these things will make sure that age just adds a layer of complexity and elegance over time. - What’s the biggest cellaring mistake people should avoid and why?
Take cellaring guides as just that, a guide. Every house in every state is different. The guide may have been based on ideal cellaring conditions. Best idea is to buy more than one bottle of your really favourite wines to see how they age over time.
